Avocado, Bacon and Goat Cheese Salad

Why This Is Strictly Keto

Greens, avocado, bacon, walnuts and warm goat cheese are all naturally low in carbs. The dressing is only olive oil, lemon juice and mustard, so there are no croutons, sweet dressings or dried fruit to push the carbs up.

Ingredients

  • 4 ounces (115 g) goat cheese log, cut into 4 rounds
  • 1 tablespoon olive oil, for the cheese
  • 4 slices bacon
  • 4 cups (80 g) arugula or mixed baby greens
  • 1 ripe avocado, sliced
  • ¼ cup (30 g) walnuts, roughly chopped
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and black pepper, to taste

Instructions

  1. Bake the goat cheese: Heat the oven to 400°F (200°C). Place the goat cheese rounds on a lined baking sheet, drizzle with 1 tablespoon olive oil and bake for 8–10 minutes until soft and lightly golden.

  2. Cook the bacon: Fry the bacon in a skillet over medium-high heat for 8–10 minutes until crisp, then crumble or cut into pieces.

  3. Make the dressing: Whisk together 3 tablespoons olive oil, the lemon juice, mustard, salt and pepper.

  4. Assemble: Toss the greens with half the dressing, arrange on plates with the avocado, bacon and walnuts, and top with the warm goat cheese. Drizzle with the remaining dressing.

Tips

  • Chill the goat cheese log for 20 minutes before slicing so the rounds cut cleanly.
  • Slice the avocado just before serving so it stays green.
  • Toast the walnuts in a dry pan for 3 minutes for extra crunch.
