Bacon Cheeseburger Lettuce Wraps

Why This Is Strictly Keto
A cheeseburger normally comes on a wheat bun. Here the bun is a crisp lettuce leaf, and the filling is nothing but ground beef, bacon, mushrooms, cheddar and tomatoes — real food with no breadcrumbs, fillers or sauces made with sugar.
Ingredients
- 6 ounces (170 g) bacon, chopped
- 4 ounces (115 g) cremini mushrooms, sliced
- 1 pound (450 g) ground beef
- Salt and black pepper, to taste
- 4 ounces (115 g) shredded cheddar cheese
- 8 ounces (225 g) crisp lettuce leaves (butter lettuce or romaine hearts)
- 4 ounces (115 g) cherry tomatoes, halved
Instructions
Cook the bacon: Fry the chopped bacon in a large skillet over medium-high heat for 10 minutes until crisp. Remove with a slotted spoon, leaving the fat in the pan.
Cook the mushrooms: Fry the mushrooms in the bacon fat for 6–7 minutes until browned, then move them to the plate with the bacon.
Brown the beef: Add the ground beef to the pan, season with salt and pepper, and cook for 7–10 minutes, breaking it up, until browned.
Assemble: Spoon the beef into the lettuce leaves, then top with the bacon, mushrooms, tomatoes and shredded cheddar. Serve right away.

Tips
- Use sturdy lettuce such as butter lettuce or romaine hearts so the leaves hold the filling without tearing.
- Sprinkle the cheddar over the hot beef so it melts slightly before you wrap.
- Add sliced pickles or diced red onion for the classic burger flavor.
