Bacon and Goat Cheese Stuffed Mini Peppers

Why This Is Strictly Keto
Mini sweet peppers are one of the lowest-carb ways to serve a filling, and the creamy stuffing is just goat cheese, cream cheese, bacon and herbs. Nothing is breaded, sweetened or processed beyond the cheese and bacon themselves.
Ingredients
- 10 mini sweet peppers, halved lengthwise and seeded
- 4 slices uncured bacon, cooked crisp and crumbled
- 4 ounces goat cheese, softened
- 4 ounces cream cheese, softened
- 2 tablespoons finely diced red onion
- 2 tablespoons chopped fresh parsley
- 1 clove garlic, minced
- 1/4 teaspoon freshly ground black pepper
Instructions
Cook the bacon: Cook the bacon in a skillet until crisp, drain on paper towels, then crumble finely.
Mix the filling: Stir the goat cheese, cream cheese, red onion, parsley, garlic and pepper together until smooth, then fold in most of the bacon.
Prep the peppers: Halve the peppers lengthwise and scrape out the seeds and membranes.
Stuff: Spoon or pipe the filling into each pepper half, mounding it slightly.
Garnish and chill: Top with the remaining bacon and parsley and refrigerate for 15 minutes before serving.

Tips
- A zip-top bag with the corner snipped makes filling the peppers quick and tidy.
- Choose a mix of red, orange and yellow peppers for a more colorful platter.
- Soften the cheeses fully before mixing so the filling is lump-free.
