Bacon-Wrapped Asparagus Bundles

Asparagus is one of the lowest-carb vegetables available, and wrapping several spears together in bacon adds fat and savory flavor with zero fillers. There’s no breading, no glaze, and no added sugar — just asparagus, bacon, olive oil, and seasoning, roasted until crisp.
Ingredients
- 1 pound (450g) asparagus, woody ends trimmed
- 6 slices bacon
- 1 teaspoon lemon pepper seasoning
- 1 tablespoon olive oil
- 1 lemon, quartered
- Freshly cracked black pepper, to taste
Instructions
Preheat the oven: Preheat to 400°F (200°C) and line a baking sheet with parchment paper.
Form the bundles: Divide the asparagus spears into 6 even bundles of 4–5 spears each.
Wrap in bacon: Wrap one slice of bacon around each bundle in a spiral, overlapping slightly, and tuck the end underneath to secure it. Place seam-side down on the baking sheet.
Season: Drizzle the bundles with olive oil and sprinkle evenly with lemon pepper seasoning. Add the lemon quarters to the sheet.
Roast: Roast for 10 minutes, then carefully flip each bundle and roast for another 8–10 minutes, until the bacon is crisp and the asparagus is tender.
Crisp if needed: If the bacon needs extra color, broil for 1–2 minutes, watching closely to avoid burning.
Serve: Squeeze the roasted lemon quarters over the bundles just before serving.
