Bacon-Wrapped Scallops with Garlic Butter

Why This Is Strictly Keto
Sea scallops wrapped in bacon and finished with a simple garlic butter sauce is naturally carb-free — no batter, no breading, no sugar in sight.
Ingredients
- 12 large sea scallops, patted dry
- 6 slices bacon, halved
- 3 tablespoons butter
- 3 garlic cloves, minced
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper, to taste
- Toothpicks, soaked in water
Instructions
Prep: Preheat oven to 400°F. Season scallops lightly with salt and pepper (bacon adds plenty of salt on its own).
Wrap: Wrap a half-slice of bacon around each scallop and secure with a toothpick.
Sear: Heat an oven-safe skillet over medium-high heat. Sear the wrapped scallops 1–2 minutes per side, just until the bacon starts to crisp and the scallops are lightly browned.
Finish in the oven: Transfer the skillet to the oven and bake 6–8 minutes, until the bacon is fully cooked and the scallops are opaque and firm.
Make the garlic butter: While the scallops finish cooking, melt butter in a small saucepan over low heat. Add garlic and cook 1 minute until fragrant, then stir in lemon juice.
Serve: Arrange scallops on a platter, drizzle with garlic butter, and garnish with parsley.

Tips
- Pat scallops very dry before wrapping — excess moisture prevents a good sear.
- Use thin-cut bacon so it cooks through in the same time as the scallops.
- Soak toothpicks in water first so they don’t scorch under the broiler or in a hot pan.
