Baked Goat Cheese with Blackberries and Pistachios

Why This Is Strictly Keto

Baked goat cheese is normally drizzled with honey and served with bread or crackers. Here the warm cheese is topped with fresh blackberries, a quick unsweetened blackberry sauce and chopped pistachios, and eaten with a fork or cucumber slices.

Ingredients

  • 10 ounces (280 g) goat cheese round or log
  • 4 ounces (115 g) fresh blackberries, divided
  • 1 teaspoon lemon juice
  • 2 tablespoons shelled pistachios, roughly chopped
  • 1 sprig fresh rosemary
  • 1 teaspoon olive oil
  • Pinch of sea salt

Instructions

  1. Preheat: Heat the oven to 350°F (175°C). Place the goat cheese in a small oven-safe dish and brush with the olive oil.

  2. Bake: Bake for 10–12 minutes, until the cheese is warm and soft but still holds its shape.

  3. Make the sauce: While the cheese bakes, mash half the blackberries with the lemon juice and salt in a small saucepan. Warm over low heat for 3 minutes until juicy.

  4. Top: Spoon the warm sauce over the cheese, pile on the remaining whole blackberries and scatter with the pistachios and rosemary leaves.

  5. Serve: Serve warm, straight from the dish.

Tips

  • Use ripe, sweet blackberries — with no honey, they provide all the sweetness.
  • Do not overbake; goat cheese should be soft and warm, not melted flat.
  • Thick cucumber slices or celery sticks make good scoops.
