Baked Trout with Lemon, Butter and Herbs

Why This Is Strictly Keto
Trout is a naturally carb-free, omega-3-rich fish. The only other components are butter, fresh lemon, garlic, and herbs — no breading, no flour, and no sugary glaze.
Ingredients
- 4 trout fillets (about 6 oz each), skin on, pin bones removed
- 4 tbsp butter, melted
- Zest and juice of 1 lemon
- 2 cloves garlic, minced
- 2 tbsp chopped fresh dill
- 2 tbsp chopped fresh parsley
- ½ tsp sea salt
- ¼ tsp freshly ground black pepper
- Lemon slices, to serve
Instructions
Heat the oven: Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
Make the lemon butter: Stir together the melted butter, lemon zest, lemon juice, and garlic.
Season the fish: Lay the fillets skin-side down on the pan. Pat dry, then season with salt and pepper and spoon the lemon butter over each one.
Bake: Bake for 10–12 minutes, until the flesh turns opaque and flakes easily with a fork.
Finish: Scatter the dill and parsley over the hot fish and serve with lemon slices.

Tips
- Trout is thin and cooks fast — start checking at 9 minutes so it doesn’t dry out.
- Pat the fillets dry before buttering so the lemon butter clings.
- Fresh herbs make the dish; if using dried, cut the amount to one third and add before baking.
