Berries with Vanilla Whipped Cream

Why This Is Strictly Keto

Just fresh berries and heavy whipping cream. Berries are the lowest-sugar fruit and rich in fiber, and the cream adds the fat that keeps the dessert satisfying. There is no sugar, sweetener or thickener — the natural sweetness of ripe fruit and a touch of vanilla are all it needs.

Ingredients

  • 5 oz (140 g) fresh raspberries, blueberries or strawberries
  • 2/3 cup (160 ml) heavy whipping cream, cold
  • 1/4 teaspoon pure vanilla extract

Instructions

  1. Prep the berries: Rinse and gently dry the berries. Hull and halve the strawberries if using. Fresh berries taste best at room temperature.

  2. Whip the cream: Using a whisk or electric mixer, whip the cold cream until it forms soft peaks. Take care not to overbeat — it should be billowy, not grainy. Beat in the vanilla at the end.

  3. Serve: Divide the berries between two bowls, spoon on the whipped cream and serve right away.

Tips

  • Chill the bowl and whisk for 10 minutes first — cold tools whip cream faster.
  • Raspberries and blackberries have the lowest net carbs; strawberries are close behind, and blueberries are the highest.
  • If you whip the cream ahead of time, cover and refrigerate it and re-whisk briefly before serving.
