Braised Red Cabbage with Bacon

Braised red cabbage is traditionally simmered with sugar or sweet apples for balance — this version skips added sugar entirely, relying instead on bacon fat, broth and a splash of vinegar for richness and tang.
Ingredients
- 8 slices bacon, chopped
- 1/2 cup diced onion
- 1 cup chicken bone broth
- 3 tablespoons apple cider vinegar
- 1 1/2 teaspoons caraway seeds
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 medium head red cabbage, thinly sliced
- Fresh parsley, chopped, for garnish
Instructions
Cook the bacon: In a large pot or Dutch oven, cook the bacon over medium-high heat until crisp, about 6–8 minutes, adding the onion during the last minute.
Deglaze: Add the chicken broth, stirring and scraping the bottom of the pot to release any browned bits.
Season: Stir in the vinegar, caraway seeds, salt, and pepper.
Braise: Add the cabbage, stir to combine, cover, and reduce heat to medium-low. Braise 30 minutes, stirring halfway through, until the cabbage is tender.
Serve: Garnish with fresh parsley and serve warm.
