Butter-Fried Green Cabbage

Why This Is Strictly Keto
Green cabbage is one of the lowest-carb vegetables, and this side dish has only three other ingredients: butter, salt and pepper. Frying it slowly in butter caramelizes the edges and brings out a natural sweetness with nothing added.
Ingredients
- 1½ pounds (680 g) green cabbage
- 4 tablespoons (55 g) butter
- ¾ teaspoon sea salt
- ¼ teaspoon black pepper
Instructions
Shred the cabbage: Remove the core and cut the cabbage into thin ribbons with a sharp knife.
Melt the butter: Melt the butter in a large skillet or wok over medium-high heat.
Fry: Add the cabbage and fry for 12–15 minutes, stirring now and then, until soft and golden brown at the edges. Lower the heat a little toward the end so it does not burn.
Season: Stir in the salt and pepper and serve hot.

Tips
- Use the widest pan you have so the cabbage fries rather than steams.
- Let it sit undisturbed for a minute or two between stirs to build color.
- It goes with almost any main course — try it with meatballs, sausages or pork chops.
