Cheddar Chive Chaffles

Why This Is Strictly Keto
A chaffle is really a waffle made of cheese and egg: the melted cheddar crisps in the iron while the eggs and a little almond flour give structure. There is no wheat flour, no baking mix and no sugar — just eggs, cheese, nuts and fresh herbs.
Ingredients
- 2 cups (200 g) finely shredded sharp cheddar cheese
- 4 large eggs
- 4 tablespoons (30 g) blanched almond flour
- 3 tablespoons finely chopped fresh chives
- ¼ teaspoon garlic powder
- ¼ teaspoon black pepper
- Butter or avocado oil, for greasing the waffle iron
Instructions
Preheat: Heat a mini waffle iron and grease it lightly.
Mix the batter: In a bowl, whisk the eggs, then stir in the cheddar, almond flour, chives, garlic powder and pepper until evenly combined.
Cook: Spoon about ⅓ cup of batter into the center of the iron, close, and cook 4–5 minutes, until deep golden and no longer steaming heavily.
Cool slightly: Lift the chaffle onto a wire rack for 1–2 minutes — it crisps up as it cools. Repeat with the remaining batter to make 8 chaffles.
Serve: Serve warm on their own, with a fried egg, or topped with sliced avocado.

Tips
- Shred the cheese finely and mix well so each chaffle holds together instead of crumbling.
- Wait for the steam to taper off before opening the iron — opening early tears the chaffle.
- Cooked chaffles freeze well between sheets of parchment; reheat in a toaster for a crisp breakfast.
