Chocolate Avocado Truffles

Why This Is Strictly Keto
Classic truffles are made from sweetened chocolate and cream. These use very dark chocolate and ripe avocado for the creamy center, with lime zest and vanilla for flavor — no added sugar, sweetener or cream.
Ingredients
- 1 ripe avocado (about 7 ounces / 200 g)
- 5 ounces (140 g) dark chocolate, at least 85% cocoa, chopped
- 1 tablespoon coconut oil
- 1 teaspoon lime zest
- ½ teaspoon pure vanilla extract
- Pinch of sea salt
- 1 tablespoon unsweetened cocoa powder, for rolling
Instructions
Melt the chocolate: Melt the chocolate and coconut oil in a heatproof bowl set over a pan of barely simmering water, stirring until smooth. Let cool for 5 minutes.
Blend the avocado: Mash or blend the avocado with the lime zest, vanilla and salt until completely smooth.
Combine: Stir the melted chocolate into the avocado until evenly mixed.
Chill: Refrigerate for 30 minutes, until firm enough to shape.
Roll: Scoop out teaspoon-sized portions, roll into balls with your hands and roll each one in the cocoa powder.
