Why This Is Strictly Keto

Every component is a whole food: chopped romaine, roasted or pan-cooked chicken breast, hard-boiled eggs, crisp bacon, avocado, cherry tomatoes and crumbled blue cheese. The only carbs come from the vegetables and half an avocado per serving, which keeps net carbs well under 10 grams. The dressing is a simple red wine vinaigrette whisked from oil, vinegar, mustard and garlic — no bottled dressing, no added sugar, no croutons.


Ingredients

Salad

  • 1 large head romaine lettuce, chopped
  • 2 cooked chicken breasts, diced
  • 6 slices bacon, cooked and crumbled
  • 4 large eggs, hard-boiled and quartered
  • 1 large avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled blue cheese
  • 2 tablespoons fresh chives, chopped

Red wine vinaigrette

  • 1/3 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, minced
  • Salt and black pepper to taste

Instructions

  1. Cook the proteins: If starting from raw, season the chicken breasts with salt and pepper and pan-sear over medium heat 6–7 minutes per side until 165°F, then rest and dice. Cook the bacon until crisp and crumble. Hard-boil the eggs, cool under cold water, peel and quarter.

  2. Make the vinaigrette: Whisk the olive oil, red wine vinegar, Dijon, garlic, salt and pepper in a small bowl or shake in a jar until emulsified.

  3. Build the salad: Spread the chopped romaine over a large shallow platter or divide among 4 bowls. Arrange the chicken, bacon, eggs, avocado, tomatoes and blue cheese in separate rows on top.

  4. Finish: Scatter the chives over everything. Drizzle with the vinaigrette just before serving, or serve it on the side so the greens stay crisp.

Tips

  • Cook the eggs and bacon a day ahead and refrigerate; the salad then comes together in ten minutes.
  • Keep the assembled rows undressed if you want leftovers — dressed romaine wilts within a few hours.
  • Swap the blue cheese for feta or shaved aged cheddar if the flavor is too sharp.
