Creamy Cucumber Dill Salad

Why This Is Strictly Keto

Sour cream, olive oil, and fresh dill form a naturally low-carb dressing with no cornstarch or sugar needed to thicken it. Cucumbers and red onion are both low in net carbs, making this a refreshing keto side that skips the sugary vinegar dressings found in traditional cucumber salads. No sugar, no thickeners.

Ingredients

  • ½ cup sour cream
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 24 oz cucumbers, thinly sliced (about 6 cups, or 12 mini cucumbers)
  • 1 small red onion, thinly sliced (about 1 cup)

Instructions

  1. Make the dressing: In a large bowl, whisk together the sour cream, dill, olive oil, lemon juice, and garlic powder. Season with sea salt and black pepper to taste.

  2. Combine: Add the sliced cucumbers and red onion to the dressing and toss until everything is evenly coated.

  3. Chill (optional): Serve right away, or refrigerate for 30 minutes to let the flavors meld further.

Tips

  • Slice the cucumbers thin and even, either by hand or with a mandoline, so the dressing coats every piece.
  • If the salad releases extra liquid after sitting, give it a quick stir before serving.
  • Swap in Greek yogurt for the sour cream for a tangier, slightly higher-protein version.
