Creamy Green Bean Casserole with Mushrooms

Why This Is Strictly Keto
The traditional casserole starts with canned cream-of-mushroom soup and canned fried onions, both thickened with flour. This version builds the sauce from real mushrooms, cream and cream cheese, and crowns it with shallots fried in avocado oil — no flour, no starch, nothing from a can.
Ingredients
- 12 oz fresh green beans (or haricots verts), trimmed
- 2 tablespoons butter
- 6 oz white mushrooms, sliced
- ½ cup chopped onion
- 1 cup chicken broth
- ¼ cup heavy cream
- 3 oz cream cheese
- 1 teaspoon fresh thyme leaves
- ½ teaspoon sea salt
- ½ teaspoon black pepper
- 2 oz shredded cheddar cheese
Crispy shallot topping
- ¼ cup avocado oil
- 3 medium shallots, sliced into thin rings
Instructions
Blanch the beans: Boil the green beans in salted water for 3 minutes, then transfer to ice water. Drain and pat dry.
Preheat: Heat the oven to 375°F (190°C).
Cook the mushrooms: Melt the butter in a large skillet over medium-high heat and cook the mushrooms and onion for about 10 minutes, until the moisture cooks off and they begin to brown.
Make the sauce: Add the broth, cream, cream cheese, thyme, salt and pepper. Bring to a boil, then simmer 8–10 minutes, stirring, until reduced and thick.
Combine and top: Toss the green beans in the sauce, spread in a greased baking dish and sprinkle with the cheddar.
Bake: Bake for 20 minutes, until bubbling.
Fry the shallots: Meanwhile, heat the avocado oil in a small skillet and fry the shallot rings about 2 minutes, until golden. Drain on paper towels.
Finish: Scatter the shallots over the casserole and bake 5 more minutes before serving.

Tips
- Choose the thinnest green beans you can find — they should snap, not bend.
- Assemble up to a day ahead (without the shallots) and refrigerate; add the shallots just before baking.
- Fry the shallots fresh for the best crunch; store them separately if you cook them ahead.
- Crumbled bacon or a splash of dry sherry in the sauce are tasty extras.
