Why This Is Strictly Keto

Classic coleslaw dressing is sweetened with regular sugar — this version uses a powdered sugar-free sweetener instead, keeping the carb count extremely low. The base is simply shredded cabbage and a creamy mayonnaise dressing, with no added starch or sugar.


Ingredients

  • 6 cups shredded coleslaw mix (cabbage and a small amount of carrot)
  • ¾ cup mayonnaise (check label: no added sugar)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon powdered erythritol or allulose sweetener (adjust to taste)
  • ½ teaspoon celery seed
  • Salt and black pepper to taste
  • 2 tablespoons green onion, finely chopped, for garnish (optional)

Instructions

  1. Make the dressing: In a small bowl, whisk together mayonnaise, apple cider vinegar, powdered sweetener, and celery seed until smooth. Season with salt and pepper.

  2. Combine: Place the shredded coleslaw mix in a large bowl. Pour the dressing over the top.

  3. Toss: Toss everything together using tongs or two large spoons until the cabbage is evenly coated.

  4. Chill: Cover and refrigerate for at least 30 minutes (longer is better) to allow the flavors to meld and the cabbage to soften slightly.

  5. Garnish and serve: Toss once more before serving. Garnish with chopped green onion if desired.
