Dark Chocolate Covered Strawberries

Why This Is Strictly Keto

Strawberries are among the lowest-sugar fruits, and 85–90% dark chocolate contains very little sugar per serving. Real chocolate melted with a little coconut oil replaces sugar-free “candy melts” or chips, and the toppings are simply unsweetened coconut and nuts.

Ingredients

  • 12 large strawberries, with stems
  • 4 oz (115 g) dark chocolate, 85–90% cacao, chopped
  • 1 tsp coconut oil
  • 2 tbsp unsweetened shredded coconut
  • 2 tbsp finely chopped pistachios

Instructions

  1. Dry the berries: Rinse the strawberries and dry them completely with paper towels — any water will make the chocolate seize.

  2. Melt the chocolate: Melt the chocolate and coconut oil in a heatproof bowl set over barely simmering water, stirring until smooth. Remove from the heat.

  3. Dip: Holding each berry by the stem, dip about two-thirds of it into the chocolate, letting the excess drip off.

  4. Top: Immediately sprinkle with shredded coconut or chopped pistachios.

  5. Set: Place on a parchment-lined tray and chill in the fridge for about 20 minutes until the chocolate is firm.

Tips

  • Use berries at room temperature; cold berries can leave condensation that ruins the chocolate coating.
  • Dark chocolate at 90% has the least sugar — check the label for sugar grams per serving.
  • Serve the same day for the best texture; the berries release juice after about 24 hours.
