Ingredients

  • 2 cups cooked ham, diced (uncured, no added sugar if possible)
  • 1 hard-boiled egg, chopped
  • ¼ cup celery, finely diced
  • 2 tablespoons onion, finely diced
  • ½ teaspoon garlic powder
  • ⅓ cup mayonnaise (check label: no added sugar)
  • 1 tablespoon Dijon mustard
  • Black pepper to taste
  • 8 large lettuce leaves (butter lettuce or romaine)

Optional add-ins:

  • 1 tablespoon dill pickle, finely diced
  • ¼ teaspoon smoked paprika or cayenne for a smoky kick

Instructions

  1. Chop the ham: Pulse the diced ham in a food processor for a few seconds until finely chopped, or chop by hand with a knife for a chunkier texture.

  2. Combine: In a large mixing bowl, combine the chopped ham, hard-boiled egg, celery, onion, and garlic powder.

  3. Make the dressing: Add mayonnaise and Dijon mustard to the bowl. Mix well until everything is evenly coated and creamy.

  4. Season: Add black pepper to taste, plus pickle or smoked paprika if using. Taste and adjust seasoning.
