Egg Roll in a Bowl

Why This Is Strictly Keto
This is the filling of an egg roll with none of the wrapper. Ground pork, shredded cabbage, carrot, onion, garlic and fresh ginger are stir-fried in toasted sesame oil and finished with coconut aminos and rice vinegar — every component is a whole food. Cabbage stands in for the deep-fried flour wrapper, dropping the carb count to a few grams per serving while keeping all of the takeout flavor.
Ingredients
- 1 lb ground pork
- 1 tablespoon toasted sesame oil
- 4 cups green cabbage, thinly shredded (about half a small head)
- 1 cup red cabbage, thinly shredded
- 1 medium carrot, julienned or grated
- 1/2 yellow onion, thinly sliced
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons coconut aminos
- 1 tablespoon rice vinegar
- Salt and freshly ground black pepper, to taste
- 3 green onions, sliced
- 1 tablespoon toasted sesame seeds
- Sriracha or chili crisp, to serve (optional)
Instructions
Brown the pork: Heat a large skillet or wok over medium-high heat. Add the ground pork and cook, breaking it apart, until no pink remains, 6–8 minutes. Drain off excess fat if desired, leaving about a tablespoon in the pan.
Start the aromatics: Push the pork to one side, add the sesame oil, then the onion, garlic and ginger. Stir for 1 minute until fragrant.
Add the vegetables: Add the green cabbage, red cabbage and carrot. Toss constantly for 4–6 minutes until the cabbage is wilted but still has a little crunch.
Season: Pour in the coconut aminos and rice vinegar, season with salt and pepper, and toss to coat. Cook 1–2 minutes more until the liquid mostly cooks off.
Finish and serve: Remove from the heat, stir in half the green onions, and divide between bowls. Top with the remaining green onions, sesame seeds, and sriracha or chili crisp if using.

Tips
- Bagged coleslaw mix is a fine shortcut for the cabbage and carrot if you are short on time.
- Ground turkey, chicken or beef all work in place of pork.
- For extra richness, crack an egg into the empty side of the pan near the end and scramble it before combining.
