Garlic Butter Steak Bites

Why This Is Strictly Keto
Sirloin, butter and garlic are the whole recipe. A hard sear gives the browned crust that other recipes get from breading or sugary marinades, and nothing here contains grains, sweeteners or processed sauces.
Ingredients
- 1 1/2 lb sirloin steak, trimmed and cut into 1-inch cubes
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon avocado oil or tallow
- 4 tablespoons grass-fed butter
- 5 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 teaspoon fresh thyme leaves
Instructions
Season the steak: Pat the steak cubes very dry with paper towels, then toss with the salt and pepper.
Sear in batches: Heat the oil in a large cast-iron skillet over high heat until it just begins to smoke. Add half the steak in a single layer and sear 2 minutes without moving, then turn and cook 1–2 minutes more. Transfer to a plate and repeat with the remaining steak.
Make the garlic butter: Reduce the heat to medium-low. Add the butter and garlic to the skillet and cook 30 seconds, until fragrant but not browned.
Toss and finish: Return all the steak to the pan with the thyme and toss to coat in the butter for 30 seconds.
Serve: Sprinkle with parsley and serve immediately, on toothpicks as an appetizer or over a bed of greens as a main course.

Tips
- Dry meat and a very hot pan are the two keys to browning rather than steaming.
- Do not crowd the skillet — cook in two batches if needed.
- Pull the bites at medium-rare to medium; they continue to cook in the garlic butter.
