Garlic Ginger Bok Choy

Why This Is Strictly Keto
Bok choy is a leafy cruciferous green with almost no carbohydrate, and it is flavored here with just garlic, ginger and avocado oil — no soy sauce, sugar or cornstarch glaze like most takeout versions. A serving has about 2g of net carbs.
Ingredients
- 2 tablespoons avocado oil
- 4 baby bok choy, sliced in half lengthwise
- 1 teaspoon minced fresh ginger
- 2 garlic cloves, minced
- 2 tablespoons water
- Salt and freshly ground black pepper, to taste
Instructions
Bloom the aromatics: Heat the avocado oil in a wok or large sauté pan over medium heat. Add the ginger and garlic and stir for about 30 seconds, until fragrant.
Stir-fry: Add the bok choy and stir-fry with tongs for 2 minutes.
Steam: Pour in the water, cover the pan and steam for 2 more minutes, until the stems are tender-crisp.
Season and serve: Turn off the heat, season with salt and pepper and serve right away.

Tips
- Rinse the bok choy well — soil often hides between the leaves.
- Watch the garlic closely; it burns quickly over medium heat.
- Tongs make turning the halves far easier than a spatula.
- For extra flavor, finish with toasted sesame seeds or a drizzle of toasted sesame oil.
- Best served fresh; leftovers keep 3–4 days in the fridge.
