Garlic Herb Roasted Pork Loin

Why This Is Strictly Keto
A boneless pork loin rubbed with fresh garlic, herbs and olive oil has no carbohydrate to speak of. There is no sugary glaze, breadcrumb crust or flour-thickened gravy — the herb paste forms a flavorful crust by itself as it roasts.
Ingredients
- 3 pounds boneless pork loin roast
- 4 cloves garlic, minced
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons chopped fresh rosemary
- 1 tablespoon fresh thyme leaves
- 1 tablespoon Dijon mustard
- 1½ teaspoons salt
- 1 teaspoon freshly ground black pepper
Instructions
Preheat and dry: Heat the oven to 400°F (200°C). Pat the pork loin dry and set it on a rack in a roasting pan.
Make the herb paste: Stir the garlic, olive oil, rosemary, thyme, mustard, salt and pepper together in a small bowl.
Coat: Rub the paste evenly over the top and sides of the pork.
Roast: Roast for 50–60 minutes, until an instant-read thermometer in the center reads 145°F (63°C).
Rest and slice: Let the pork rest for 15 minutes, then slice ½ inch thick and spoon any pan juices over the slices.

Tips
- Always rest the roast for at least 10–15 minutes so the juices redistribute and the slices stay moist.
- A thermometer is the surest way to avoid dry pork — 145°F followed by a rest leaves it tender with a blush of pink.
- Serve with garlic herb mashed cauliflower or roasted broccolini for a complete low-carb plate.
