Garlic Sautéed Swiss Chard

Why This Is Strictly Keto

Swiss chard is a leafy green with very few digestible carbs, and the dish is built on nothing more than olive oil, garlic and lemon. Cooking the stems along with the leaves keeps all of the fiber.

Ingredients

  • 1 large bunch Swiss chard (about 1 lb / 450 g)
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, thinly sliced
  • ¼ teaspoon red pepper flakes
  • ¼ cup (60 ml) water
  • ½ teaspoon fine sea salt
  • 1 tablespoon fresh lemon juice
  • Lemon wedges to serve

Instructions

  1. Prep the chard: Rinse the chard. Slice the stems into ½-inch pieces and roughly chop the leaves, keeping them separate.

  2. Cook the stems: Heat the olive oil in a large skillet over medium heat. Add the garlic and pepper flakes and cook for 1 minute. Add the stems and water and cook for 4 minutes until softening.

  3. Wilt the leaves: Add the leaves and salt and toss. Cover and cook for 3–4 minutes until the leaves are tender.

  4. Finish: Remove from the heat, stir in the lemon juice and serve warm with extra lemon wedges.

Tips

  • Do not let the garlic brown; it turns bitter.
  • Rainbow chard looks lovely, but any variety works.
  • Leftovers are delicious folded into scrambled eggs.
