Greek Chicken Burgers with Tzatziki

Why This Is Strictly Keto
The patties are ground chicken packed with spinach, sun-dried tomatoes, red onion, garlic and herbs — there are no breadcrumbs or flour binders that burgers normally contain. They are served in butter lettuce with tzatziki, feta, tomato and avocado instead of a bun, so each serving has about 4g of net carbs.
Ingredients
For the patties
- 1 pound ground chicken
- ¼ cup diced red onion
- 3 garlic cloves, minced
- ¼ cup finely chopped sun-dried tomatoes
- 1 cup loosely packed baby spinach, roughly chopped
- 1 tablespoon chopped fresh dill
- 2 teaspoons dried oregano
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- 2 tablespoons extra-virgin olive oil
To serve
- Butter lettuce leaves, tzatziki, crumbled feta, sliced red onion, sliced tomato, sliced avocado
Instructions
Mix the patties: In a medium bowl, combine the chicken, red onion, garlic, sun-dried tomatoes, spinach, dill, oregano, salt and pepper. Mix with your hands, then divide into 4 large patties.
Cook: Heat the olive oil in a large skillet over medium heat. Cook the patties about 5 minutes per side, until golden brown and cooked through (165°F / 74°C internal temperature). You can also grill them.
Serve: Wrap each patty in butter lettuce and top with tzatziki, feta, red onion, tomato and avocado.

Tips
- If the mixture feels soft or sticky, chill it for 15 minutes; chill formed patties 30 minutes before grilling.
- Roasted red peppers can replace the sun-dried tomatoes, and 1 teaspoon of dried dill replaces the fresh.
- Mix crumbled feta straight into the patties for an extra-savory burger.
- Cooked patties keep 3–4 days in the fridge and freeze well for up to 3 months with parchment between them.
- Skip the bun for a deconstructed bowl of greens, avocado, tomato, onion, feta and tzatziki.
