Green Beans Almondine

Why This Is Strictly Keto
This classic French side is five whole ingredients: green beans, sliced almonds, shallot, garlic and lemon, cooked in olive oil. Nothing breaded, nothing sweetened. Green beans are one of the lowest-carb vegetables, so a generous serving comes in around 6 grams of net carbs, and the almonds add crunch, healthy fat and a little more fiber.
Ingredients
- 1 lb fresh green beans, trimmed
- 1/3 cup sliced almonds
- 3 tablespoons extra-virgin olive oil (or butter)
- 1 small shallot, thinly sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- Salt and black pepper to taste
Instructions
Blanch the beans: Bring a large pot of salted water to a boil. Add the green beans and cook 3 minutes, until bright green and crisp-tender. Drain and, if you want them to stay vivid, plunge into ice water, then drain again.
Toast the almonds: In a large dry skillet over medium heat, toast the sliced almonds 2–3 minutes, shaking the pan, until golden and fragrant. Tip onto a plate.
Sauté: Add the olive oil to the skillet. Cook the shallot 2 minutes, until soft, then add the garlic and cook 30 seconds more.
Combine: Add the green beans and toss 2–3 minutes, until heated through. Stir in the lemon juice, salt and pepper.
Serve: Transfer to a platter and scatter the toasted almonds over the top.

Tips
- Blanch the beans up to a day ahead; the final sauté then takes five minutes.
- Toast the almonds separately and add at the end so they stay crisp.
- Swap the olive oil for butter and add a pinch of nutmeg for a more traditional almondine.
