Ham and Cheese Egg Roll-Ups

Why This Is Strictly Keto
These roll-ups use thin slices of real deli ham as the wrapper instead of a flour tortilla, filled with soft scrambled eggs and melted cheddar. There’s no wrap, no breading, and no filler — just eggs, meat, and cheese rolled together for a portable, whole-food breakfast.
Ingredients
- 8 large eggs
- 2 tablespoons butter
- Salt and freshly ground black pepper, to taste
- 8 thin slices deli ham
- ½ cup shredded cheddar cheese
- ¼ cup diced bell pepper (optional)
Instructions
Scramble the eggs: Whisk the eggs with a pinch of salt and pepper. Melt the butter in a nonstick skillet over medium-low heat, add the eggs, and cook, stirring gently, until softly scrambled and just set. Stir in the diced bell pepper, if using, and remove from heat.
Lay out the ham: Arrange the ham slices flat on a work surface or cutting board.
Fill: Spoon a portion of scrambled egg onto one end of each ham slice and sprinkle with shredded cheddar.
Roll: Roll each ham slice up tightly around the filling, starting from the egg-filled end.
Warm through: Place the roll-ups seam-side down in the same skillet over medium-low heat for 2–3 minutes, turning once, until the ham is warmed and the cheese has melted.
Serve: Serve warm, either whole or sliced into pinwheels.

Tips
- Cook the eggs low and slow for the softest texture — they’ll firm up a bit more once rolled and rewarmed.
- Thin-sliced deli ham rolls more easily than thick-cut; look for pliable, not stiff, slices.
- These reheat well from the fridge, making them a great grab-and-go breakfast for the week.
