Garlic Herb Roast Beef

Why This Is Strictly Keto

A lean beef roast, butter, garlic and herbs contain virtually no carbohydrate. The crust is built from Dijon mustard and fresh herbs rather than flour or breadcrumbs, so the whole roast stays under 1g net carb per serving.

Ingredients

  • 3 lb (1.4 kg) beef top round or eye of round roast
  • 3 tablespoons butter, softened
  • 1 tablespoon Dijon mustard
  • 4 cloves garlic, minced
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon fresh thyme leaves
  • 1½ teaspoons fine sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ cup (120 ml) beef bone broth
  • Chopped fresh parsley to serve

Instructions

  1. Bring to room temperature: Take the roast out of the refrigerator 45 minutes before cooking and pat it dry. Heat the oven to 450°F (230°C).

  2. Make the rub: Mix the butter, Dijon, garlic, rosemary, thyme, salt, pepper and paprika into a paste. Spread it over the whole roast.

  3. Sear in the oven: Set the roast on a rack in a roasting pan and roast for 15 minutes to brown the crust.

  4. Roast low: Lower the heat to 325°F (165°C) and roast for 45–60 minutes, until the center reads 125°F (52°C) for medium-rare.

  5. Rest and slice: Rest the roast under loose foil for 15 minutes. Slice very thinly against the grain. Stir the broth into the pan juices, warm for a minute and spoon over the slices.

Tips

  • A leave-in meat thermometer is the surest way to avoid overcooking a lean roast.
  • Slice as thinly as you can; top round is tender when cut thin across the grain.
  • Cold leftovers make excellent sandwich-free lunch plates with salad.
