Homemade Sage Breakfast Sausage Patties

Why This Is Strictly Keto
Store-bought breakfast sausage often contains added sugar, dextrose, and fillers. Homemade patties are just ground meat and dried herbs and spices, so they contain effectively zero carbs — and you control every ingredient.
Ingredients
- 1 lb ground pork (not extra-lean; a little fat keeps the patties juicy)
- 1 tsp rubbed sage
- ½ tsp dried thyme
- ½ tsp garlic powder
- ½ tsp sea salt
- ½ tsp freshly ground black pepper
- ¼ tsp ground fennel seed
- Pinch of red pepper flakes (optional)
- 1 tbsp butter or ghee, for cooking
Instructions
Mix: In a bowl, combine the pork with the sage, thyme, garlic powder, salt, pepper, fennel, and red pepper flakes. Mix with your hands until the seasoning is evenly distributed, but don’t overwork the meat.
Shape: Divide into 8 portions and press each into a patty about ½ inch thick and 3 inches wide.
Cook: Melt the butter in a large skillet over medium heat. Cook the patties 4–5 minutes per side, until browned and cooked through to 160°F (71°C).
Serve: Serve hot with eggs, avocado, or sautéed greens.

Tips
- Mix the seasoning into the meat the night before for a deeper flavor.
- Uncooked patties freeze well — layer with parchment and cook straight from frozen, adding a couple of minutes per side.
- Press a small dimple into the center of each patty so it cooks flat instead of puffing up.
