Slow Cooker Kalua Pork

Why This Is Strictly Keto
Pork shoulder, salt and smoke flavor are the whole recipe, so there is no sugar, marinade or sauce to add carbs. The long, slow cook turns a tough, fatty cut into silky shredded meat.
Ingredients
- 4 lb (1.8 kg) boneless pork shoulder (butt)
- 1 tablespoon coarse sea salt (Hawaiian alaea salt if you can find it)
- 1 tablespoon pure liquid smoke (no sugar added)
- ½ cup (120 ml) water
- Cauliflower rice, to serve
Instructions
Season: Pierce the pork all over with a fork. Rub it with the salt and liquid smoke.
Slow cook: Place the pork in the slow cooker, add the water, cover and cook on low for 8–10 hours until the meat shreds easily.
Shred: Move the pork to a bowl and shred with two forks, discarding any large pieces of fat.
Moisten and serve: Stir in ½ cup of the cooking juices, taste for salt and serve over cauliflower rice.

Tips

- For crispy edges, spread the shredded pork on a sheet pan and broil for 3–4 minutes.
