Keto Beef Kofta Skewers

Why This Is Strictly Keto
Traditional kofta needs no breadcrumbs or fillers — the flavor is mixed straight into the ground beef with fresh herbs and spices. The only added carbs are a little onion and garlic.
Ingredients
- 1 1/2 pounds ground beef (80/20)
- 1/2 small yellow onion, grated and squeezed dry
- 3 cloves garlic, minced
- 1/4 cup finely chopped fresh parsley
- 2 tablespoons finely chopped fresh mint
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cinnamon
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- Lemon wedges, to serve
Instructions
Mix: Combine all ingredients in a large bowl and mix with your hands just until evenly blended — do not overwork the meat.
Chill: Cover and refrigerate for 30 minutes so the flavors meld and the mixture firms up.
Shape: Divide into 8 portions and mold each one around a flat metal skewer into a long, 1-inch-thick sausage shape.
Cook: Grill over medium-high heat, or cook under a broiler, for 10 to 12 minutes, turning every 3 minutes, until browned and cooked through.
Serve: Rest 3 minutes and serve with lemon wedges, a cucumber salad or a dollop of full-fat Greek yogurt.

Tips
- Grate the onion and squeeze out the liquid so the meat holds onto the skewer.
- Wet your hands while shaping to keep the meat from sticking.
- Flat skewers hold the meat better than round ones; if using wood, soak them for 30 minutes first.
