Why This Is Strictly Keto

Just six ingredients — all naturally sugar-free and flour-free. This recipe is sweetened only with erythritol. There is no sugar and no flour. It tastes like cheesecake filling but takes only 5 minutes.


Ingredients

  • 8 oz (225g) full-fat cream cheese, softened
  • ½ cup (120ml) heavy whipping cream
  • 3–4 tablespoons powdered erythritol (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • Pinch of salt

Optional Toppings

  • A few fresh raspberries or blueberries (keto-friendly in small amounts)
  • Sugar-free strawberry sauce
  • A sprinkle of cinnamon
  • Sugar-free chocolate chips

Instructions

  1. Beat the cream cheese: Using a hand mixer, beat softened cream cheese on medium speed until completely smooth, about 1 minute.

  2. Add flavor: Add powdered erythritol, vanilla extract, lemon juice, and salt. Beat on medium speed until fully combined and fluffy.

  3. Whip in the cream: Pour in the cold heavy whipping cream gradually while the mixer runs on medium-high. Continue beating for 1–2 more minutes until the mixture becomes light, airy, and mousse-like.

  4. Taste and adjust: Taste and add more erythritol if you prefer it sweeter.

  5. Chill: Transfer to small glasses or bowls. Refrigerate for 15 minutes to firm up slightly (or serve immediately if you prefer a softer texture).

  6. Serve: Add any optional toppings just before serving.
