Keto Creamed Spinach

Why This Is Strictly Keto
Classic creamed spinach is thickened with a flour-and-milk roux. This version relies on cream cheese, heavy cream and Parmesan instead, so there is no flour, no cornstarch and no sugar — just real dairy and fresh spinach.
Ingredients
- 1 tablespoon butter
- 1/4 small onion, finely diced
- 2 cloves garlic, minced
- 1 lb (450g) fresh baby spinach
- 1/4 cup (60 ml) heavy cream
- 2 oz (55g) full-fat cream cheese, cubed
- 1/4 cup (25g) freshly grated Parmesan cheese
- Pinch of freshly grated nutmeg
- Sea salt and freshly ground black pepper, to taste
Instructions
Soften the aromatics: Melt the butter in a 10-inch cast iron or heavy skillet over medium heat. Add the onion and garlic and cook 3–4 minutes until softened.
Wilt the spinach: Add the spinach in handfuls and cook 3–4 minutes, stirring, until it has reduced in volume. Cover the pan for about a minute to help it wilt evenly.
Add the cream: Stir in the heavy cream and cream cheese and cook until the cheese melts into a smooth sauce and the spinach is fully wilted.
Finish: Stir in the Parmesan and nutmeg, then season with salt and pepper. Serve immediately.

Tips
- Grate your own Parmesan for the smoothest, creamiest sauce.
- Frozen spinach works too — thaw it and squeeze out all the water before adding.
- Stir in crumbled bacon, sautéed mushrooms or toasted almonds for extra texture.
- Serve alongside steak, roast chicken or salmon.
