Traditional egg drop soup is thickened with cornstarch — this recipe skips it entirely, using whisked eggs for texture instead. Seasoned with sesame oil, ginger, and garlic rather than soy sauce, this is a completely soy-free, no-starch soup. Under 1g net carbs per serving.


Ingredients

  • 4 cups (1 litre) good-quality chicken bone broth
  • 3 large eggs, whisked well in a measuring cup with a spout
  • 1 teaspoon fresh ginger, finely grated (or ½ tsp ground ginger)
  • 2 cloves garlic, minced
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon coconut aminos (soy-free, optional for depth)
  • ½ teaspoon white pepper (or black pepper)
  • Salt to taste
  • 2 spring onions (scallions), green parts only, thinly sliced
  • Optional: pinch of xanthan gum for a slightly thicker broth

Instructions

  1. Bring broth to a simmer: Pour chicken broth into a medium saucepan over medium-high heat. Add ginger and garlic. Bring to a gentle boil, then reduce heat to medium-low to a steady simmer.

  2. Season: Add sesame oil, coconut aminos (if using), white pepper, and salt. Taste and adjust seasoning. The broth should taste rich and well-seasoned before the eggs go in.

  3. Optional thickening: If you prefer a thicker consistency, stir in a tiny pinch of xanthan gum (¼ teaspoon maximum) and whisk for 30 seconds.

  4. Create egg ribbons: This is the key technique. Using chopsticks or a fork, stir the broth in a slow circular motion to create a gentle whirlpool. Slowly drizzle the whisked eggs into the moving broth in a thin, steady stream — the broth’s heat will instantly cook them into delicate ribbons.

  5. Finish: Remove from heat immediately. The residual heat will finish cooking the eggs gently.

  6. Serve: Ladle into bowls, garnish with spring onion greens, and a final drop of sesame oil if desired. Serve hot.
