Classic French onion soup is finished with a slice of baguette floating under the melted cheese — this version leaves the bread out entirely, letting the deeply caramelized onions, rich broth, and broiled gruyère carry the dish on their own. Ingredients

  • 1½ lbs yellow onions, thinly sliced
  • 2 garlic cloves, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 3 cups beef or vegetable broth
  • ¾ cup dry white wine
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • ½ teaspoon dried sage
  • Salt and black pepper, to taste
  • 1¼ cups shredded gruyère cheese

Instructions

  1. Caramelize the onions: Melt the butter with the olive oil in a large pot over medium heat. Add the sliced onions and garlic and cook slowly, stirring occasionally, for about 30 minutes, until deeply golden and soft. Lower the heat if they start to brown too fast.

  2. Build the broth: Add the broth, wine, bay leaf, thyme, and sage. Bring to a boil, then reduce heat and simmer for 15–20 minutes to let the flavors meld. Season with salt and pepper to taste. Remove the bay leaf.

  3. Assemble: Preheat the broiler. Ladle the soup into ovenproof bowls set on a baking sheet.

  4. Broil: Top each bowl generously with shredded gruyère. Broil for 5–7 minutes, watching closely, until the cheese is melted, bubbly, and golden in spots.

  5. Serve immediately while the cheese is still bubbling.
