Keto Lobster Bisque

Why This Is Strictly Keto
Classic bisque is thickened with a flour roux or rice. This one gets its body from reducing real broth with tomato paste and heavy cream, so there is no flour, rice or starch — just lobster, butter, vegetables and cream.
Ingredients
- 3 tablespoons butter
- ½ yellow onion, finely chopped
- 1 celery stalk, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 3 cups (720 ml) seafood or chicken broth
- 1 cup (240 ml) heavy cream
- 12 ounces (340 g) cooked lobster meat, chopped
- 1 teaspoon fresh thyme leaves
- ¼ teaspoon cayenne pepper
- Salt and black pepper, to taste
- 1 tablespoon lemon juice
Instructions
Sauté the vegetables: Melt the butter in a large pot over medium heat. Cook the onion and celery for 5 minutes until soft, then stir in the garlic for 1 minute.
Add the tomato paste: Stir in the tomato paste and cook for 2 minutes to deepen its flavor.
Simmer: Pour in the broth, add the thyme and cayenne, and simmer for 15 minutes.
Blend: Use an immersion blender to purée the soup until smooth.
Finish: Stir in the cream and lobster and warm gently for 5 minutes without boiling. Season with salt, pepper and lemon juice.

Tips
- Lobster tail meat works beautifully; buy cooked tails or steam them yourself for 8 minutes.
- Do not let the soup boil after the cream goes in, or it can separate and the lobster can turn tough.
- A homemade shellfish stock made from the lobster shells adds even more depth.
