Ingredients

Chocolate Coating
- ½ cup (45g) unsweetened cocoa powder
- 3 tablespoons coconut oil, melted
- 2 tablespoons powdered erythritol
Instructions
Mix the filling: In a medium bowl, stir together the peanut butter, softened butter, powdered erythritol, vanilla extract, and salt until completely smooth and well combined.
Shape into balls: Using a small cookie scoop, portion the mixture into 16 balls and roll between your palms. Place on a parchment-lined tray.
Freeze until firm: Freeze the balls for 20 minutes, or until firm enough to dip.
Make the coating: Whisk together the cocoa powder, melted coconut oil, and powdered erythritol in a small bowl until smooth and glossy.
Dip: Using a fork or toothpick, dip each peanut butter ball into the chocolate coating, letting the excess drip off. Return to the parchment-lined tray.
Chill to set: Refrigerate for 15 minutes, or until the chocolate coating hardens.
