Powdered erythritol replaces sugar entirely, and the chocolate coating is made from scratch with unsweetened cocoa powder rather than a processed candy-style product. Ingredients

Peanut Butter Filling

  • 1 cup (250g) natural creamy peanut butter (no added sugar)
  • 4 tablespoons (55g) unsalted butter, softened
  • ⅓ cup (65g) powdered erythritol
  • 1 teaspoon vanilla extract
  • Pinch of salt

Chocolate Coating

  • ½ cup (45g) unsweetened cocoa powder
  • 3 tablespoons coconut oil, melted
  • 2 tablespoons powdered erythritol

Instructions

  1. Mix the filling: In a medium bowl, stir together the peanut butter, softened butter, powdered erythritol, vanilla extract, and salt until completely smooth and well combined.

  2. Shape into balls: Using a small cookie scoop, portion the mixture into 16 balls and roll between your palms. Place on a parchment-lined tray.

  3. Freeze until firm: Freeze the balls for 20 minutes, or until firm enough to dip.

  4. Make the coating: Whisk together the cocoa powder, melted coconut oil, and powdered erythritol in a small bowl until smooth and glossy.

  5. Dip: Using a fork or toothpick, dip each peanut butter ball into the chocolate coating, letting the excess drip off. Return to the parchment-lined tray.

  6. Chill to set: Refrigerate for 15 minutes, or until the chocolate coating hardens.

  7. Store: Keep refrigerated in an airtight container for up to 2 weeks, or freeze for longer storage.
