Keto Salisbury Steak with Mushroom Gravy

Why This Is Strictly Keto

The patties are bound with an egg, grated onion, a little almond flour and Parmesan instead of breadcrumbs, and the gravy gets its body from real cream cheese melted into beef broth — no flour roux, cornstarch or gums. Beef, mushrooms and butter make this a deeply savory, completely whole-food dinner.

Ingredients

Steak patties

  • 1 pound ground beef
  • 1 large egg, beaten
  • 1/4 cup grated onion
  • 1/4 cup almond flour
  • 1/4 cup finely grated Parmesan cheese
  • 1 tablespoon tomato paste
  • 2 teaspoons dry mustard
  • 1 teaspoon minced garlic
  • Salt and black pepper, to taste

Mushroom gravy

  • 2 tablespoons butter
  • 1/4 cup sliced onion
  • 8 ounces sliced mushrooms
  • 1 1/2 cups beef broth
  • 1 teaspoon Dijon mustard
  • 4 ounces cream cheese, cubed

Instructions

  1. Mix the patties: In a large bowl, combine the ground beef, egg, grated onion, almond flour, Parmesan, tomato paste, dry mustard and garlic. Season with salt and pepper.

  2. Shape and chill: Divide the mixture into 4 oblong patties about 3/4 inch thick and refrigerate for 30 minutes so they hold together in the pan.

  3. Sear the patties: Melt the butter in a large skillet over medium-high heat. Brown the patties for about 2 minutes per side, then transfer to a plate.

  4. Cook the vegetables: Add the sliced onion to the skillet and cook for 3 minutes, then add the mushrooms and cook for 5 minutes more.

  5. Build the gravy: Pour in the beef broth and scrape up the browned bits. Stir in the Dijon and cream cheese until melted and the gravy thickens slightly.

  6. Simmer and serve: Return the patties to the skillet and simmer over medium-low heat for 5–7 minutes, spooning the gravy over them. Serve over mashed cauliflower.

Tips

  • Chilling the patties is what keeps them from falling apart — do not skip it.
  • Let a good crust form on the first side before flipping, and do not skimp on the butter.
  • Any mushroom works; chop them smaller if you want the gravy more spoonable.
  • Patties can be formed up to 2 days ahead; leftovers keep 3 days in the fridge and freeze well for up to 3 months.
  • Serve with mashed cauliflower, a green salad or roasted green beans.
