Keto Strawberry Fool

Why This Is Strictly Keto
A fool is just fruit and whipped cream. Here, fresh strawberries and heavy cream are sweetened with erythritol instead of sugar, so there is no sugar and no flour, and the dessert needs no baking at all.
Ingredients
- 2 cups (480 ml) cold heavy whipping cream
- 1 teaspoon vanilla extract
- Pinch of sea salt
- 16 oz (450g) fresh strawberries, hulled and chopped, plus extra sliced strawberries for topping
- 2/3 cup (130g) granulated erythritol or monk fruit-erythritol blend
- 1 tablespoon fresh lemon juice
Instructions
Chill: Place a large mixing bowl and the beaters in the freezer for 15–20 minutes.
Whip the cream: Add the cold cream, vanilla and salt to the chilled bowl and beat on high until stiff peaks form. Set aside.
Make the purée: Blend the strawberries, erythritol and lemon juice until completely smooth. Set aside 1 cup of the purée for layering.
Fold: Gently fold the remaining purée into the whipped cream until it turns pale pink and mousse-like.
Layer: Into each of 8 glasses, spoon 1 tablespoon of the reserved purée, then a layer of strawberry cream, another tablespoon of purée and a final layer of cream.
Serve: Top with sliced strawberries and serve right away, or refrigerate until ready to serve.

Tips
- A cold bowl, cold beaters and cold cream give the fullest, fluffiest whipped cream.
- Powdered erythritol blends more smoothly than granulated; grind it briefly in a coffee grinder if needed.
- Make it a few hours ahead and keep it chilled — it holds well for up to 24 hours.
- Raspberries or blackberries work beautifully in place of strawberries.
