Why This Is Strictly Keto

The restaurant version leans on starchy potatoes; this one keeps the Italian sausage, bacon, kale, garlic and cream that give the soup its identity and swaps the potatoes for cauliflower florets. Everything in the pot is a whole food, and the cauliflower soaks up the broth just like potato would while adding only a couple of grams of carb per bowl.


Ingredients

  • 6 slices bacon, chopped
  • 1 lb Italian sausage (bulk, or removed from casings)
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 5 cups chicken broth
  • 4 cups cauliflower florets, bite-sized
  • 4 cups kale, stems removed and leaves torn
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Crisp the bacon: In a large pot over medium heat, cook the chopped bacon until crisp. Remove with a slotted spoon and set aside, leaving the fat in the pot.

  2. Brown the sausage: Add the sausage and cook, breaking it up, until browned, 6–8 minutes. Add the onion and cook 4 minutes until softened.

  3. Add aromatics: Stir in the garlic and red pepper flakes and cook 1 minute until fragrant.

  4. Simmer: Pour in the chicken broth, add the cauliflower, and bring to a simmer. Cook 12–15 minutes until the cauliflower is fork-tender.

  5. Finish: Stir in the kale and simmer 3–4 minutes until wilted. Reduce the heat to low, stir in the cream and Parmesan, and warm through without boiling. Season with salt and pepper.

  6. Serve: Ladle into bowls and top with the reserved crispy bacon.

Tips

  • Do not let the soup boil after the cream goes in or it can separate.
  • Spinach can replace kale; add it at the very end since it wilts in seconds.
  • The soup thickens as it sits — loosen leftovers with a splash of broth when reheating.
