Lemon Garlic Shrimp and Asparagus Foil Packets

Why This Is Strictly Keto
Shrimp is nearly carb-free protein and asparagus is one of the lowest-carb green vegetables. The sauce is only butter, garlic, lemon and herbs — no flour, no sugar and no breading.
Ingredients
- 1 1/2 pounds large shrimp, peeled and deveined
- 1 pound asparagus, trimmed and cut into 2-inch pieces
- 4 tablespoons butter, cut into small pieces
- 4 cloves garlic, minced
- Zest and juice of 1 lemon
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Lemon wedges, to serve
Instructions
Preheat: Preheat the oven to 425°F (220°C) and tear off four 12 x 18-inch sheets of heavy-duty foil.
Toss: Toss the shrimp and asparagus with the garlic, lemon zest, salt, pepper and red pepper flakes.
Fill the packets: Divide among the foil sheets, dot each pile with butter and drizzle with the lemon juice.
Seal: Fold the foil over and crimp the edges tightly to make four sealed packets, leaving a little room for steam.
Bake: Place on a baking sheet and bake 13 to 15 minutes until the shrimp are pink and opaque and the asparagus is crisp-tender.
Serve: Carefully open each packet, scatter with parsley and serve with lemon wedges.

Tips
- Use large (21-25 count) shrimp; small shrimp overcook before the asparagus softens.
- Thin asparagus spears cook fastest — slice thick ones in half lengthwise.
- The packets can also go on a hot grill for 8 to 10 minutes.
