Marinated Feta and Olives with Fresh Herbs

Why This Is Strictly Keto
Feta, olives and olive oil are all naturally low in carbohydrate and rich in healthy fat. Fresh herbs, garlic and lemon add big flavor with practically no carbs.
Ingredients
- 8 oz (225 g) feta cheese, cut into ¾-inch cubes
- 1½ cups (225 g) mixed olives, such as Kalamata and green
- ½ cup (120 ml) extra virgin olive oil
- 2 cloves garlic, thinly sliced
- Zest of 1 lemon and 1 tablespoon lemon juice
- 2 sprigs fresh rosemary
- 4 sprigs fresh thyme
- ½ teaspoon red pepper flakes
- ½ teaspoon whole black peppercorns
Instructions
Layer: Place the feta cubes and olives in a clean glass jar or bowl, tucking in the garlic, rosemary and thyme.
Add the marinade: Whisk the olive oil with the lemon zest, lemon juice, pepper flakes and peppercorns and pour over, making sure the feta is covered.
Marinate: Cover and refrigerate for at least 2 hours, and up to 1 week, turning the jar once or twice.
Serve: Bring to room temperature for 20 minutes and serve with cucumber slices or on a cheese board.

Tips
- Choose feta sold in brine; it holds its shape better than pre-crumbled feta.
- Keep the feta fully submerged in oil so it stays fresh.
- Save the leftover oil for salad dressings.
