Prosciutto-Wrapped Mozzarella Bites with Herb Oil

Why This Is Strictly Keto
Just cheese, cured pork and herbs. Fresh mozzarella and prosciutto are naturally carb-free, and the herb oil is nothing more than olive oil, parsley, garlic and lemon — no breading, no sugary glaze, no processed fillers.
Ingredients
- 12 ounces fresh mozzarella (ciliegine or a log cut into 12 pieces), drained and patted dry
- 6 thin slices prosciutto, cut in half lengthwise
- 1 cup packed fresh flat-leaf parsley leaves
- 2 cloves garlic
- 1/3 cup extra-virgin olive oil
- 1 tablespoon fresh lemon juice
- Freshly ground black pepper, to taste
- Kalamata olives and tomato slices, to serve (optional)
Instructions
Make the herb oil: Finely chop the parsley and garlic, then stir them into the olive oil with the lemon juice and a pinch of pepper.
Dry the cheese: Drain the mozzarella and pat each piece thoroughly dry so the prosciutto clings.
Wrap: Wrap each piece of mozzarella in a half slice of prosciutto, pressing the end firmly to seal.
Plate: Spoon the herb oil onto a platter and nestle the wrapped bites in it.
Serve: Finish with black pepper and serve with olives and a few tomato slices if you like. Serve within 30 minutes for the best texture.

Tips
- Prosciutto is salty enough on its own — taste the herb oil before adding any salt.
- Use the thinnest slices you can find; thick prosciutto tears and will not wrap neatly.
- The bites can be wrapped a few hours ahead and refrigerated; bring to room temperature before serving.
