Roasted Broccolini with Lemon and Garlic

Why This Is Strictly Keto
Broccolini is a low-carb green vegetable, and this side dish is seasoned with only olive oil, garlic, lemon and salt. Nothing is breaded, glazed or sweetened; high-heat roasting brings out the flavor on its own.
Ingredients
- 1 pound broccolini, ends trimmed
- 3 tablespoons extra-virgin olive oil
- 4 cloves garlic, peeled and lightly smashed
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon red pepper flakes (optional)
- 1 lemon, half cut into wedges, half zested and juiced
Instructions
Preheat: Heat the oven to 425°F (220°C).
Season: Toss the broccolini on a rimmed baking sheet with the olive oil, smashed garlic, salt, pepper and red pepper flakes, and spread into a single layer.
Roast: Bake for 12–15 minutes, turning once, until the stems are tender and the florets are crisp and charred at the edges.
Finish: Toss with the lemon zest and juice, and serve hot with extra lemon wedges.

Tips
- Use a single layer with space between stalks — a crowded pan steams the broccolini instead of charring it.
- Roast the garlic cloves whole so they turn soft and sweet; they are good mashed onto the stems.
- Add a little grated Parmesan in the last 2 minutes if you like a cheesy finish.
