Ingredients
- 1 lb (450g) pork breakfast sausage
- 1 medium green bell pepper, diced
- 1 small red onion, diced
- 10 large eggs
- 2 tablespoons heavy whipping cream
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 cups shredded cheddar cheese
Instructions
Brown the sausage: In a large skillet over medium-high heat, cook the sausage, bell pepper, and onion together, breaking the sausage into small pieces, until the meat is no longer pink, about 6–8 minutes. Drain excess fat.
Whisk the eggs: In a medium bowl, whisk together the eggs, heavy cream, garlic powder, salt, and pepper until smooth.
Combine: Reduce the heat to medium. Pour the egg mixture over the sausage mixture in the skillet.
Cook the eggs: Stir occasionally and cook for 3–4 minutes, until the eggs just begin to set.
Add the cheese: Sprinkle the shredded cheddar evenly over the top. Cover and cook for 2–3 minutes more, until the cheese melts and the eggs are fully set.
Serve: Serve hot, straight from the skillet.
