Sheet Pan Chicken Fajitas (No Tortilla)

Why This Is Strictly Keto
Traditional fajitas are wrapped in flour tortillas — this version skips the wrap entirely and serves everything over cauliflower rice or crisp lettuce instead. No tortilla, no flour, no added sugar in the seasoning. Just chicken, peppers, onions, and bold spices.
Ingredients
- 1.5 lbs (680g) boneless, skinless chicken thighs, sliced into strips
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 3 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper to taste
- Juice of 1 lime
- Fresh cilantro, chopped, for garnish
To serve:
- Cauliflower rice or lettuce leaves
- Sliced avocado or guacamole
- Sour cream
- Shredded cheddar cheese
Instructions
Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
Combine everything: In a large bowl, toss the chicken strips, bell peppers, and onion with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper until evenly coated.
Spread on the sheet: Spread the mixture out in a single layer on the prepared baking sheet, avoiding overcrowding so everything roasts rather than steams.
Bake: Roast for 20–25 minutes, stirring once halfway through, until the chicken is cooked through (165°F / 74°C) and the vegetables are tender with slightly charred edges.
Finish: Remove from the oven and squeeze fresh lime juice over everything. Sprinkle with chopped cilantro.
Serve: Serve over cauliflower rice or in lettuce leaves, topped with avocado, sour cream, and shredded cheese as desired.
