Thin ribbons of cucumber stand in for bread or crackers, rolled around real cream cheese and smoked salmon — no grains, no crackers, no added sugar. It’s an elegant, whole-food take on a classic lox-and-cream-cheese pairing that keeps carbs to almost nothing.


Ingredients

  • 1 English cucumber
  • 4 oz cream cheese, softened
  • 1 tablespoon fresh dill, chopped, plus extra for garnish
  • Everything bagel seasoning, to taste
  • 4 oz thinly sliced smoked salmon

Instructions

  1. Slice the cucumber: Using a mandoline or vegetable peeler, slice the cucumber lengthwise into long, thin strips. Arrange the strips slightly overlapping on a cutting board and gently pat dry with a paper towel.

  2. Layer the filling: Spread a thin layer of softened cream cheese evenly over the cucumber strips. Sprinkle with everything bagel seasoning, then lay smoked salmon over the cream cheese, followed by the chopped dill.

  3. Roll: Starting from one end, fold the cucumber strip up and over, then continue rolling into a tight log. Repeat with the remaining strips, then slice each roll crosswise into bite-sized pieces (about 10 rolls total).

  4. Chill: Cover and refrigerate for at least 30 minutes to let the flavors meld and make the rolls easier to handle.

  5. Serve: Arrange on a platter, garnish with extra dill, and serve chilled.
