Smoked Salmon and Cream Cheese Cucumber Roll-Ups

Thin ribbons of cucumber stand in for bread or crackers, rolled around real cream cheese and smoked salmon — no grains, no crackers, no added sugar. It’s an elegant, whole-food take on a classic lox-and-cream-cheese pairing that keeps carbs to almost nothing.
Ingredients
- 1 English cucumber
- 4 oz cream cheese, softened
- 1 tablespoon fresh dill, chopped, plus extra for garnish
- Everything bagel seasoning, to taste
- 4 oz thinly sliced smoked salmon
Instructions
Slice the cucumber: Using a mandoline or vegetable peeler, slice the cucumber lengthwise into long, thin strips. Arrange the strips slightly overlapping on a cutting board and gently pat dry with a paper towel.
Layer the filling: Spread a thin layer of softened cream cheese evenly over the cucumber strips. Sprinkle with everything bagel seasoning, then lay smoked salmon over the cream cheese, followed by the chopped dill.
Roll: Starting from one end, fold the cucumber strip up and over, then continue rolling into a tight log. Repeat with the remaining strips, then slice each roll crosswise into bite-sized pieces (about 10 rolls total).
Chill: Cover and refrigerate for at least 30 minutes to let the flavors meld and make the rolls easier to handle.
Serve: Arrange on a platter, garnish with extra dill, and serve chilled.
