Ingredients

  • 1 large English cucumber, sliced into ¼-inch rounds
  • 8 oz (225g) full-fat cream cheese, softened
  • 4 oz (115g) cold-smoked salmon, cut into small pieces
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh dill, finely chopped (plus extra for garnish)
  • 1 clove garlic, minced (or ¼ teaspoon garlic powder)
  • Salt and black pepper to taste
  • Capers, for garnish (optional)

Instructions

  1. Prepare the cucumber: Slice the cucumber into rounds about ¼-inch thick. Lay the slices on paper towels and pat dry to remove excess moisture — this keeps the bites from getting soggy.

  2. Make the cream cheese mixture: In a mixing bowl, combine softened cream cheese, lemon juice, lemon zest, fresh dill, minced garlic, salt, and pepper. Mix with a hand mixer or fork until smooth and creamy.

  3. Assemble: Spoon or pipe a small dollop of the cream cheese mixture onto each cucumber round.

  4. Top with salmon: Fold a small piece of smoked salmon and place it on top of each dollop of cream cheese.

  5. Garnish: Top each bite with a sprig of fresh dill and a caper if using.

  6. Serve: Arrange on a serving platter and serve immediately for the best texture. If making ahead, store the cucumber, cream cheese mixture, and salmon separately and assemble just before serving.
