Spicy Sausage and Kale Soup

Why This Is Strictly Keto
This soup takes its cue from Zuppa Toscana but leaves out the potatoes that usually bulk it up, leaning instead on real hot Italian sausage, kale, garlic, and a broth-and-cream base. Everything in the pot is a whole ingredient — no starchy filler needed to make it feel hearty.
Ingredients
- 1 lb hot Italian sausage, casings removed
- 1 small onion, diced
- 4 garlic cloves, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 4 cups kale, stemmed and chopped
- 1 cup cherry tomatoes, halved
- ¼ teaspoon red pepper flakes (or to taste)
- Salt and freshly ground black pepper, to taste
- ¼ cup grated Parmesan cheese, for serving
Instructions
Brown the sausage: In a large pot over medium-high heat, cook the sausage, breaking it apart with a spoon, until browned, about 6–8 minutes. Remove with a slotted spoon and set aside, leaving the rendered fat in the pot.
Sauté the aromatics: Add the onion to the pot and cook until softened, about 4 minutes. Stir in the garlic and red pepper flakes, and cook 1 minute more.
Simmer the broth: Pour in the chicken broth, scraping up any browned bits. Return the sausage to the pot and bring to a simmer for 10 minutes.
Add cream and kale: Stir in the heavy cream, kale, and cherry tomatoes. Simmer for 8–10 minutes, until the kale is tender.
Season and serve: Season with salt and pepper to taste. Ladle into bowls and top with grated Parmesan.

Tips
- Use hot Italian sausage for real heat, or mild sausage plus extra red pepper flakes if you prefer to control the spice level yourself.
- Strip the kale leaves from the tough center ribs before chopping for the best texture.
- This soup thickens as it sits — thin with a splash of extra broth when reheating leftovers.
