Steak and Cauliflower Breakfast Hash

Why This Is Strictly Keto
Cauliflower takes the place of the potatoes in a traditional hash, browning in the same butter as the steak, onions and peppers. Every ingredient is a whole food, and there are no starches, sauces or sweeteners — just meat, vegetables and butter.
Ingredients
- 2 tablespoons butter, preferably grass-fed, divided
- 8 ounces steak (ribeye, fillet or sirloin), cut into 1-inch cubes
- 4 ounces cauliflower florets (about 1/4 medium head), chopped
- 4 ounces yellow onion (about 1 medium), chopped
- 3 ounces red bell pepper (about 1/2), sliced
- 3 ounces yellow bell pepper (about 1/2), sliced
- 1 ounce jalapeño pepper (about 1/2), finely minced
- 1 tablespoon fresh parsley, chopped
- Salt and black pepper, to taste
Instructions
Heat the pan: Melt 1 tablespoon of the butter in a large skillet over medium-high heat.
Sear the steak: When the pan is hot, add the steak cubes in a single layer, season with salt and pepper, and sear each side. Lower the heat and cook to your preferred doneness.
Rest the steak: Move the steak to a plate and cover with foil to keep it warm.
Cook the cauliflower: Reduce the heat to medium and add the remaining tablespoon of butter. When it stops foaming, add the cauliflower and cook for about 2 minutes, stirring occasionally.
Add the vegetables: Add the onion and cook until the edges just begin to brown, then stir in the bell peppers and jalapeño. Season with salt and pepper and cook until the peppers are crisp-tender.
Combine and serve: Return the steak and any collected juices to the pan, toss everything together, and finish with the parsley. Taste and adjust the seasoning.

Tips
- Chop the vegetables the night before and refrigerate them to make breakfast a 10-minute job.
- Heat the pan fully before adding the steak and leave space between the cubes so they sear instead of steam.
- Steak cubes cook fast — pull them off the heat promptly if you like medium-rare.
- Top with a fried or poached egg for an even heartier breakfast.
