Strawberry Greek Yogurt Parfait with Toasted Nuts

Why This Is Strictly Keto
Granola is what usually turns a parfait into a carb bomb. Here toasted walnuts and almonds provide the crunch, and whipped cream stretches the full-fat yogurt so the layers stay rich while the fruit stays limited to a small handful of strawberries.
Ingredients
- 1/2 cup full-fat plain Greek yogurt
- 1/2 cup cold heavy cream
- 1/2 teaspoon pure vanilla extract
- 1/3 cup sliced fresh strawberries
- 1/4 cup roughly chopped walnuts and almonds
- 2 tablespoons unsweetened shredded coconut
- 1 teaspoon unsweetened cocoa powder
- 1 teaspoon powdered erythritol (optional)
Instructions
Toast the nuts: Toast the walnuts and almonds in a dry skillet over medium heat for 3–4 minutes, stirring often, until fragrant. Add the coconut for the last minute and cool.
Whip the cream: Whip the heavy cream with the vanilla and erythritol (if using) until soft peaks form.
Combine the base: Gently fold the whipped cream into the Greek yogurt.
Layer: Into two jars or glasses, layer the yogurt cream, strawberries and toasted nuts, repeating until the jars are full.
Finish: Dust the top with cocoa powder and top with a strawberry slice. Serve right away.

Tips
- Toasting the nuts and coconut takes only a few minutes and makes a big difference in flavor.
- You can prep the yogurt cream and toasted nuts separately and assemble in the morning so nothing gets soggy.
- Blackberries or raspberries are a lower-carb swap for the strawberries.
